Cookin with Janet

Many of  you know our neighbor, Janet Minnick. She is always helping us around the mill, and offering her words of wisdom. Janet is truley apart of the Carney Family, and we wanted her to be apart of this new blog. So from time to time, we're going to "Cook with Janet". These are good "old country style" recipes. Try them out and let her know how you like them!

Green Beans with Hog Jowl

Ingredients:
2 lbs. Pole Beans (if you don't have pole beans, you can buy some green bean seed at Carney's)
1/4 lb. Hog Jowl
1 tsp. Sugar
1/2 tsp. Salt
1 Onion, quartered
Water to cover

Use a dutch oven for this dish.

Snap and wash your beans. Combine all the ingredients. Cover and simmer for 2 hours or until water has just about cooked away. Serve & enjoy!
